With a background in traditional coffee farming, the brothers have spent years developing their approach to quality, sustainability and innovative processing.\u003cbr\u003eFor this lot, only fully ripe, wine-red cherries are selected before undergoing a carefully controlled fermentation process. The coffee is fermented in-cherry for 60 hours, followed by a second fermentation after pulping, with reserved must and leachates reintroduced to build further complexity. The process is finished with a temperature-shock treatment and 10–12 days of closely monitored drying.\u003cbr\u003ePink Bourbon is known for its pronounced sweetness, lively acidity and silky body.
